Sixteen is the signature restaurant of the Trump International Hotel, with Chef Frank Brunacci at the helm.  At the sixteenth floor of Trump Tower, elevator doors open to a pair of wine rooms enclosed with floor to ceiling plate glass that frame the view to the top of the Tribune Tower.  The 30 foot-high main dining room is formed by a series of offset West African wood shells and a significant Swarovski chandelier center stage. The restaurant boasts three distinctive private dining rooms, each with focus on a special view; one toward the lake, a second upriver, and the third looking directly at the landmark Jeweler’s Building across the river.

Enjoy a four course meal with wine pairings as the architect and chef discuss the philosophy behind the design of the restaurant and the menu.

EXECUTIVE CHEF
Frank Brunacci

Executive Chef Frank Brunacci joined the Trump International Hotel & Tower after cooking in some of the world’s most distinguished kitchens. With a modern American approach at the heart of his cooking philosophy–which unifies traditional European and Asian classic cooking techniques, Chef Brunacci oversees all areas of the property’s culinary programs: its fine dining restaurant, Sixteen; its chic lounge, Rebar; room service and banquets. Since the property’s January 2008 opening, the restaurant has been lauded by critics and food reporters worldwide.


ARCHITECT
Joseph Valerio

Joseph M. Valerio, FAIA, a founding partner of Valerio Dewalt Train Associates, is recognized as a significant voice in contemporary American architecture. A tireless innovator with an enormous capacity for creation, his award winning work has been widely published in international periodicals and was the subject of a monograph published by Rizzoli in 1999. In 2002 he was appointed to the National Board of Peer Reviewers under the General Services Administration design Excellence Program.

 

VICE PRESIDENT
T. Colm O’Callaghan

O’Callaghan was appointed Vice President & Managing Director of the Trump International Hotel & Tower Chicago in November 2006 after leading some of the most renowned hotels in the United States.  As head of the management team for the 339-room property, O’Callaghan—a 25-year industry veteran—is involved in every aspect of launching what has become one of the most notable hotel launches Chicago has experienced in decades.  Prior to joining Trump, he worked at several of the of the country’s leading properties, including the Mandarin Oriental San Francisco Hotel, Merv Griffin’s Beverly Hilton and the St. Regis in New York.


PROJECT ARCHITECT
Randall Mattheis

Mattheis, a Principal at Valerio Dewalt Train Associates, possesses a wide variety of design and project management experience.  His projects include brand-wise public and retail spaces for Presidential Towers, showrooms for Whirlpool Corporation, Sixteen restaurant at Trump Tower Chicago, a flagship retail store for Gamin International, and stores for Cole Haan in Chicago and New York.  Educational projects include the University of Chicago Laboratory Schools, the Shedd Aquarium, and Columbia College Chicago.  In twenty-five years, his work has brought multiple design awards and has been widely published.
